These Orange and Yogurt Parfaits with Homemade Granola have become a staple at our breakfast table. We have always been big fans of yogurt and homemade granola, but this parfait, makes a bowl of yogurt and granola look bad. This parfait combines a homemade granola (you can totally skip this step and use one from the grocery store), segments of bright and flavorful oranges, and plain yogurt jazzed up with orange zest, vanilla, and a swirl of maple syrup.
Choosing a Homemade Granola to Make
In my opinion, there is no better granola than the granola that you make yourself. I am a huge fan of all of the granola recipes from Cookie and Kate. In fact, my go-to granola for these orange parfaits is the Orange & Almond Granola from Cookie and Kate. The granola is seriously orange, and you know how obsessed I am with orange lately. It is also loaded with whole almonds and golden raisins.
If the Orange & Almond granola doesn’t interest you, try The Very Best Granola from Cookie and Kate or this recipe for Almond Pecan Granola from Ahead of Thyme. They are all packed with nuts and dried fruits. Each one is sweetened with maple syrup instead of using a refined sugar. Granola is easy to make. Choose a recipe and give it a try! All of these recipes are easy to make, will make your house smell incredible, and each recipe makes enough to last your family for at least a few days.
Flavoring the Yogurt
I like to use a 5.3 oz non flavored Greek yogurt for this recipe. The Greek yogurt is thicker and doesn’t thin out or get watery when you add the maple syrup and vanilla to the yogurt. Open your yogurt container and mix in the orange zest, vanilla extract, and maple syrup. Stir to combine the ingredients.
Slicing the Oranges
After you have removed some of the zest from your orange (about 1/6 of the rind), you’ll cut the skin from the sides of the orange and then thinly slice the orange and divide it into segments.
Making the Orange and Yogurt Parfaits
I like to start with a segment of orange in the bottom of each of the two parfait glasses. Next, you’ll add 1/3 of the flavored yogurt to the bottoms of two glasses. Add 1/4 cup of granola and a layer of orange slices. Repeat this layering one more time. Finally, finish the parfaits off with a dollop of yogurt, a pretty segment of orange, and a sprinkle of orange zest!
