Do you love finding a few new recipes on the weekend that you can make ahead of time, and then your whole week is more enjoyable, and maybe even a little bit easier? I know I do! This post contains recipes for my weekend meal planning. It also outlines my strategies for prepping, cooking, and baking on the weekend, to prepare for a busy week. A little work on the weekend guarantees that my whole family has healthy and delicious foods to eat all week!
On weekends, I try to make at least two baked items, a big pot of soup or other main course, and usually a batch of homemade granola. Preparing food on the weekend allows us to have healthy and delicious meals and snacks for the week. It gives me a head start on week night meals as well. Being prepared also makes me look like a rock star when we have friends over for an impromptu play date and I pull homemade scones out of the oven with little to no effort at all. My freezer is always stocked with 2-3 different cookie doughs, pizza dough, and most recently, scones that are ready to be baked (thanks to my friend Anna for this idea).
I like to plan for the upcoming week on Thursday or Friday nights. Throughout the week I look at recipes and save the ones that seem most interesting. On Thursday and Friday evenings, I peruse cookbooks for interesting ideas for dinner and get feedback from Britt and the kids about what sounds good. Next, I write down my cooking and baking plan, create a shopping list, and I’m ready to go. Cooking and baking on the weekend sets us all up well for a week of fun and healthy eating.
